Potato  Chip Tortilla

I had been looking forward for last Friday’s recipe for some time now.  A Spanish tortilla without the hassle of parboiling potatoes?  A chance to play up with flavored potato chips?  Two Sundays ago I prepared the Potato Chip Tortilla, using onion and garlic flavored potato chips.

As Around My French Table recipes go, this one takes points for originality and whimsy.  Unfortunately, I was not a fan of the texture, even after adding an egg to the suggested four.  It didn’t help that the onion and garlic flavors were too strong between the potato chips and the aromatics already included in the recipe.  I will give this tortilla a second shot  soon, cutting back at least half an ounce of chips (if using thicker cut ones) and sticking to a milder flavor.

    An extra egg was a good idea, but I wasn’t a huge fan either. I did make the creme brulee this weekend, though…FABULOUS!!!

    Sorry to hear this wasn’t a favorite. Hopefully the creme brulee will prove more worthwhile.

    I don’t know if I would go for this either. To me the slow cooking of the potatoes in olive oil for the Spanish tortilla is the best way. The pics are beautiful. I hope Santa treated you really good this year.
